Grilled Vegetable Skewers

Ingredients:
– 2 zucchinis, sliced into 1/2-inch rounds
– 1 red bell pepper, cut into chunks
– 1 yellow bell pepper, cut into chunks
– 1 red onion, cut into chunks
– 8-10 cherry tomatoes
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried Italian seasoning
– Salt and pepper, to taste

Instructions:
1. In a large bowl, combine the shredded cabbage and grated carrot.
2. In a separate small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and pepper until well combined.
3. Pour the dressing over the cabbage and carrot mixture.
4. Toss everything together until the vegetables are evenly coated in the dressing.
5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together. This creamy coleslaw adds a refreshing and crunchy element to any BBQ meal!
