Ingredients:
– 4 ears of corn, husked
– 1 red bell pepper, diced
– 1/2 red onion, diced
– 1 jalapeño pepper, seeded and minced (optional for heat)
– 1/4 cup chopped fresh cilantro
– Juice of 1 lime
– 2 tablespoons olive oil
– Salt and pepper, to taste

Instructions:
1. Preheat your grill to medium-high heat.
2. Grill the corn until lightly charred, turning occasionally, for about 8-10 minutes. Let it cool slightly.
3. Cut the kernels off the cob and place them in a large bowl.
